strawberry watermelon popsicles ¦ simple living


summer weather is upon us! after such a long winter i am so excited to see the sunshine, hot temps, things growing in my garden and sprinklers! my kids spend hours outside...stealing peas off their vines, sucking nectar from nasturtiums, in bathing suits, running through sprinklers, drawing, playing or having picnics in the sunshine...it makes my heart happy seeing such lovely childhoods happening :)
my kids love popsicles and in all honesty...so do i! nothing better then something cold on a hot day! we have many recipes we like to make...from yogurt based to juice to cream. the beauty of homemade popsicles is that they are super easy, not full of chemicals, dyes, and processed sugars or chemical sweeteners. most of the time fruit is naturally sweet enough but sometimes, depending on the recipe or fruit, we use honey to add a little extra sweetness.
today i want to share with you a strawberry watermelon popsicle recipe! super quick, easy, and refreshing!!
strawberry watermelon popsicles

ingredients
2 1/4 cups of fresh pureed watermelon
3/4 cup strawberry honey simple syrup (recipe below)
chopped mint (optional)
method
-cut watermelon in half, scoop watermelon from rind and puree to make 2 1/4 cups
- add simple syrup and mix
- stir in mint, if using
- pour into popsicle molds and freeze 4-5 hours
strawberry honey simple syrup
ingredients
1/2 cup honey
1/2 cup water
2 cups fresh or frozen strawberries

method
- combine honey and water in a pot and heat until honey dissolves into water
- add strawberries and simmer until soft and mushy
- pour into blender and pulse a few times for a chunky syrup or strain for a clear smooth syrup.
- store leftover syrup in a container in the fridge and use for more popsicles later, making homemade soda, drizzling over ice cream, or pancakes, or...

my recipe is an adaptation of the parsley infused watermelon popsicles found on mother earth living combined with  the strawberry honey simple syrup i found on this blog (making strawberry soda with this recipe sounds absolutely lovely, don't you think?)
